Converting a vinyl deck to wood

I have a 16 x 20 foot existing deck that has vinyl covering. At this time there are areas with rot under the vinyl in the plywood.

It requires new surface only as the joists are good and the posts are good also. We would like to convert this to a wood deck.

The joists run out from our home and I am concerned with the southern exposure that there is a problem with sealing the area correctly.

Is it possible to strip the plywood off and replace it with wood/pvs wood product?

It there a specific method of sealing the siding of our home once the vinyl layer has been stripped? Thank you for your expertise.
